The first restaurant of the group, Le Petit Commines was founded 7 years ago by Mathieu Limon, who shaped the identity of the place: simplicity, sharing, and quality.
Today, our Director Youness ensures that this spirit lives on, combining professionalism with a relaxed atmosphere.

Mathieu
Mathieu is Mr. Papounet – our very own Yoda. Calm wisdom (or not), a sharp eye, and a mystical ability to be everywhere at once. He has trained, guided, corrected, and inspired (almost) all of us. He leads with humanity, high standards, and kindness – when Yoda speaks… the padawans listen.Youness
A graduate of Glion, he travelled the world’s hotels before landing in Paris to take the helm of Le Petit Commines. Half-manager, half-crooner – he runs the team like Sinatra ruled the stage: with style, swing, and a hint of improvisation.Assane
Born in Guinea, he began cooking as an apprentice with the Papounets’ group 9 years ago. Today he’s the Head Chef, a partner in the company, and officially titled “Maître Restaurateur” by the prefect. He mixes flavors like Snake mixes hits: with fire, heart, and always a new taste experience.Baptiste
An apprentice at Le Petit Commines 9 years ago, he sharpened his palate in wine service before returning as a maître d’hôtel who commands respect. Half long-haired draft-version singer, half Sting: he serves a grand cru with rockstar charisma.Guillaume
Guillaume is the house fairy in Swiss-army-knife mode… slightly worn out. Always where he’s needed, when he’s needed. He handles service pressure and even the bistro next door. When the team spirals, he grabs the broom.Abdoul Ly
Sous-chef and official heart-throb of the team. From Senegal, bringing smiles, flow, and a burning passion for football. In the kitchen he’s the chef’s right hand; in the dining room, heads turn.Mady
Our dishwasher from Senegal, nicknamed “Shawla” for his constant smile, rhythm, and showman energy. As plates pile up, he dances between pots and water jets like he’s on stage — always full power, always good vibes.
